Roasting notes: We love this coffee so much that we felt it would make a great espresso too. Espresso is a volatile process, and any undesirable flavors can be brought out to an intense level if roasted or prepared improperly. We wanted to preserve the lemon acidity but bring out more sweetness. We consider this coffee to be on the lighter side of the roasting spectrum for espresso which helps highlight the lemon acidity, but developed long enough to have a great amount of sweetness.
