Cupping notes: Sweet berry, jasmine, lemon with balanced acidity

Roasting notes: Our goal was to bring out the most sweetness while bringing out the most balanced acidity as possible. High acidity can be perceived as really tart and without the sweetness, can be perceived as imbalanced. We also wanted to mitigate the deeper baked flavors that can be brought out in roasting when roasted too long or too dark, so our aim was a quick roast to a lower ending temperature but to fully develop the coffee. A quicker roast will preserve acidity and bring out the natural flavors.
